During the spring of 2006, I visited David and Sherry Douglas's farm where warm sunshine gently encouraged tender asparagus spears through chilled winter soil, when I had an idea that was the start of Ouse Valley Foods...

Here was English asparagus, one of life's short lived, exquisite culinary treats...but where was its perfect partner, Hollandaise?

Since then, every year between the last week of April and the end of June, here at Ouse Valley Foods we focus on the production of fresh, delicious Hollandaise sauce.

Hollandaise is a classic accompaniment with asparagus, salmon and the scrumptious dish, Eggs Benedict. It can also be served in many ways to lift an ordinary dish to the heights of gourmet delight.

The sauce is made in small batches from an amalgamation of local free range eggs, Sussex butter, a special spiced wine vinegar and fresh lemon juice.
